Looking for a healthy sweet treat for those lunch boxes? Send your kids back to school with a smile with these homemade fruit roll-ups!

Ingredients:

1 pint fresh strawberries diced
Sugar (enough to sweeten) * can substitute honey!
Lemon juice (optional)

Instructions:

  1. Preheat oven to 170 degrees F
  2. Line a large baking sheet with a baking mat or parchment paper.
  3. Place strawberries in food processor until blended.
  4. Add enough sugar to sweeten and a splash of lemon juice (if desired).
  5. Pour into prepared pan and spread out into a thin, even layer.
  6. Bake for 4 hours or until the center is set.
  7. Remove from oven and let cool.
  8. Carefully peel up the fruit roll-up and place the sticky, smooth side on parchment paper.
  9. Cut to size so that you have an even rectangle to work with.
  10. Cut into 2 inch strips and roll-up firmly.
  11. Store in airtight container.

Show up to that Fourth of July cookout with this delicious pie you didn't even have to work up a sweat over.

Ingredients                        

1 cup sugar 
1.25 cups water 
2 tablespoons cornstarch 
0.25 cup strawberry gelatin powder (recommend Jello)
4 cups fresh strawberries, halved
1 9-inch baked pie crust
sweetened whipped cream (optional)

Directions

  1. Bring sugar, water and cornstarch to a boil over medium heat.
  2. Cook stirring constantly for 1 minute or until thickened.
  3. Stir in strawberry gelatin until dissolved.
  4. Remove from heat; chill 2 hours.
  5. Arrange strawberries in pastry shell and pour gelatin mixture over.
  6. Cover and chill 2-4 hours.
  7. Serve pie with whipped cream if desired.

Hey everyone,

We appreciate everyone being patient as we navigate this wacky weather and Covid-19 issues.  We are waiting on the strawberries to ripen back up and we will be having berries for another month!  The way it looks right now, we will pick as many berries in June as we will in April and May combined.  That is super late for strawberry season but as with a lot of things 2020 is anything but normal.

We will be limiting entrance into the stand for your and our protection. We will be doing curbside service. Our online store is now active. You can order online and pick up at  the fruitstand on the Murphy Road. Strawberries are not going to be offered online at this time due to the weather and still overwhelming demand.
